Soy nuts are made from soybeans soaked in water, drained, and then baked or roasted.[1] They can be used in place of nuts and are high in protein and Dietary fiber.[2]
 

To make home-made soy nuts, simply soak dried soybeans overnight in the fridge.  As oligosaccharides begin to ferment, some degree of CO2 bubbling may be seen in the water.  Drain and rinse the beans, and roast in a 325 degree F oven for about 1 hour while stirring every 20 minutes or so, or until the edges just begin to crisp and brown.  Reduce the oven temperature to 200 degrees F and leave for 3 hours until completely dry.  Salt lightly after drying is complete.   You can also flavor them with taco seasoning, seasoning salt, ranch dressing powder, etc.
