Here is a simple recipe for home-made tofu ice cream.

1 1/2 cups soft tofu

1 1/2 cups pureed stewed apricots (crushed sieved berries, use 1/4 cup more sugar)

3/4 cups granulated sugar

1 cup unsweetened soy milk

Whirl in blender, and freeze in ice cream maker until firm.  Serves 6

Soy Shakes

Soy protein powders and tofu, as well as juices, chocolate and vanilla flavoring, comprise the basis of many delicious soy shakes.  Many premade shakes as well as mixes are available for ease of use.

Very Berry Strawberry Soy Smoothie

1 large carrot, washed

3 cups silken tofu

1 cup soy milk, vanilla is fine, calcium and vitamin D fortified

1 cup frozen strawberries (you can substitute other dark berries)

1 frozen banana

1 1/2 cups lemonade, orange juice, or apple juice

 

Mix in a very heavy duty blender like a Vitamix until smooth.  3 large servings.

Coffee and Chocolate Soy Protein Shake

1 cup ice chips (or cubes if your blender is strong)

1 frozen banana

1 Tbsp. instant coffee (freeze-dried)

1/4 cup isolated soy protein

2 cups vanilla soy milk with Vitamin D and Calcium

3 cubes of unsweetened chocolate or 3Tbsp unsweetened cocoa powder

 

Mix in Vitamix or heavy-duty blender until smooth and chocolate is dispersed.  3 large servings.
