Soy Yogurt

The soy yogurt actually looks like usual cream yogurt. Soy yogurt is yogurt prepared using soy milk, yogurt bacteria, mainly Lactobacillus bulgaricus and Streptococcus thermophilus and sometimes additional sweetener, like fructose, glucose, honey or raw sugar. It is one of the best alternatives to dairy yogurt for people with lactose intolerance. It is also suitable for vegans, as the bacteria for store bought soy yogurt are usually no more grown on a dairy base.

Soy yogurt can be prepared at home using the same method like for dairy yogurt. One tablespoon of additional sweetener per 1 liter of unsweetened, pure soy milk may be added to let the yogurt become thicker and more yogurt like. The soy milk lacks the lactose (milk sugar), which is the basic food for the yogurt bacteria.

Soy yogurt tastes like usual dairy cream yogurt. Homemade soy yogurt may have a little soy aftertaste, but good, store bought soy yogurt is a 100% alternative to the dairy counterpart.

Soy yogurt contains as less fat as soy milk - maximum 2.7 %.

Soy cheese is made from soy milk and is used as an alternative for dairy cheese. Concerning lactose intolerant individuals, soy cheese is an excellent alternative. Ordinarily soy cheese does not contain casein, as it is mostly manufactured for vegan consumers, but some kinds do, especially those sold in big supermarkets.

Soy cheese usually has a lower fat content than its dairy counterparts. Besides its low-fat content, soy cheese is also cholesterol-free and is a source of soy protein and isoflavones. Some soy cheese brands melt similar to dairy cheese when heated, while others stay mostly firm, or melt only when grated into tiny slices.

Soy cheese comes in a variety of types including "bleu" cheese, cheddar, edam, garlic/herb, gouda, mozzarella, monterey jack, parmesan, and cream cheese.
